3Stir panko breadcrumbs , mozzarella cheese , a large drizzle of olive oil, salt, and black pepper into the bowl with the remaining melted butter. Pat chicken cutlets dry with paper towels; drizzle with olive oil. Season all over with Italian seasoning , salt, and pepper. 4Sprinkle the panko mixture evenly over each chicken cutlet. Bake on the top rack until the chicken is cooked through and topping is golden brown, about ⏱️ 22 minutes to ⏱️ 25 minutes .
